I have approximately 40 knives under my belt from what I can figure, grinding part time for just under 3 years now. Never used a jig, never even used a rest.

I adjust the jig so that the gouge is making good contact at the cutting edge and just touching the back edge of the hollow grind. As soon as I get a burr developing on the inside surface I switch to a 4000 grit water stone to finish honing, followed with a cotton buff charged with chrome oxide or rouge to remove the burr.

One jig I saw a while back was nothing more than a stepped metal dowel clamped to the tool rest. The dowel was placed perpendicular to the wheel's movement. The back of the blade was set in the step and the edge was rotated towards the contact wheel till it started cutting. Moving the blade laterally cut the hollow.

The new jig makes hollow grinding very easy, accurate and with a great finish. Installation takes about 15 minutes and involves un-bolting the motor from the stand, putting in the jig and re-attaching the motor. 4 screws! Some hints: Practice a bit on an old blank first, to get the feel of it.

Hollow grinds can be done freehand or with a variety of jigs. The diameter of the hollow grind is determined by the size of the contact wheel. Historically, the most popular jigs are pressure jigs. They track perpendicular to the grinders belt. Pressure is created by turning a dial on the back of the jig which moves the blade forward into the belt.
Re: sharpening a simple screwdriver. It is the same jig for both flat grinding and hollow grinding. You just rotate the blade 90 degrees and adjust the rest on the grinder. Then grind on the face of the wheel. note the clamp below the jig that sets equal placement of the hollow grind on both sides.

A hollow grind will self-jig the blade so that it is supported on the sharpening medium. A hollow grind automatically created a microbevel, which reduces the area to hone, making sharpening faster. Flat grinds are predominantly for those that (a) do not use a grinder at all, or (b) are intending to use a honing guide.

My son sold it to somebody else. You do spend most of your time adjusting it. My son started free hand grinding and makes a lot better knife now.

Also, I do not use a jig, just grip the blade and let my fingers guide it on the tool rest. I hone on a hard white Arkansas oil stone with WD-40 and that's it. Keep the edge and the heel of the hollow grind on the stone and you have very little metal to remove.
